as for disabling MySites in general, I assume you're using out-of-box / customization techniques as described on the web. Now, for PeopleZen's own user name linkings, you can set this in the PeopleZen Web Part's settings tool-pane in the <I>Miscellaneous section: under both Render user names and Render user profile pictures, select either No or Yes, but do not link (instead of the two Yes, linked choices).

Hope this helps -- if you'd like to keep linking but would like to link not to the MySite but to another page, let us know here and we will see if/how/when this can be done.
